Ingredients: 1 tbsp vegetable oil or olive oil 1 and 1/2 lb beef stew meat 4 c water 1 tsp ea. sugar, lemon juice, Worcestershire, salt, allspice 1 small bay leaf 1 clove garlic; chopped fine 1 medium onion, sliced 6 medium carrots, cut into fourths 3 medium potatoes, cut into eights 3 medium parsnips, peeled and cut into fourths 1/2 c cold water 2 tbsp all purpose flour Thyme Dumplings: 3 tbsp shortening 1 1/2 c flour 1/2 tsp salt 1 1/2 tsp chopped fresh thyme or 1/2 tsp dried thyme 3/4 c milk

Directions:Heat oil in dutch oven over medium heat, cook beef in oil, stirring often until brown. Stir in water, seasonings, and onion. Heat to boiling; reduce heat, cover and simmer 1 hr 45 min., adding water if necessary. Stir in vegetables. Cover; simmer 30 min. or until beef and vegetables are tender. Shake 1/2 cup cold water and flour in tightly covered container; gradually stir into the stew. Heat to boiling, stirring constantly. Boil and stir 1 minute, reduce heat. Prepare thyme dumplings. Drop dumpling dough by 10-12 spoonfuls into beef mixture. Do not drop directly into liquid. Cook uncovered 10 minutes; cover and cook 10 minutes longer.
DUMPLINGS: Cut shortening into flour, salt, and thyme with pastry blender in bowl until mixture resembles fine crumbs. Stir in milk until blended. Servings 6 |
