1/4 cup olive oil
4 garlic cloves, crushed
1 onion, chopped
3 large stalks celery, chopped
2 lbs. frozen lima beans
2 lbs. frozen peas
2 (15oz.) cans diced tomatoes
1/4 tsp. oregano
1 tbsp. fresh basil or dried
1 tbsp. fresh parsley or dried
1 tsp. salt
1/2 tsp. pepper

Cover bottom of saucepan with olive oil.
Sauté garlic, onion and celery. Do not burn garlic.
Add the rest of ingredients and bring to low boil.
Cook on low-medium for 1hour. Serves 10-12.

This is so easy to make and the flavors are wonderful.
Great as a side dish. This recipe can be cut in half, if not feeding a crowd. This is one of those dishes that is better the next day.
