1/3 c whipping cream
1/2 c butter, melted
1 egg white
1/2 t cream of tartar
few grains of salt
peppermint oil or other flavored oil if desired
food coloring
2 boxes (1 lb each) powdered sugar, shifted
granulated sugar, optional
real chocolate, melted for dipping (optional)

Directions:
Directions:
Heat cream until hot but not boiling in 1 qt saucepan, add butter, egg white, cream of tartar and salt. Add peppermint oil and food coloring; blend well. Add powdered sugar, a small amount at a time; blending well after each addition with a spoon and then with hands. Add additional powdered sugar if necessary. Mints may be rolled in sugar and pressed into soft rubber molds, then immediately released, or may be formed into patties. Let set to dry. Dip in melted chocolate if desired. Note: if using different flavors and /or colors, divide finished candy and work in flavoring/food coloring after adding sugar.
