4 cups diced apples
1 cup coarsely broken pecans
2 cups sugar
3 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
1 cup oleo, melted
2 teaspoons vanilla
2 large eggs, slightly beaten

Grease and flour 2 - 1 pound coffee cans.
Stir together apples, nuts and sugar. Let stand 1 hour (makes its own juice). In a larger bowl stir together flour, baking soda, salt, spices. Add apples, mix and stir well. Stir in melted shortening and vanilla. Lastly, add eggs.
Pour into cans. Cover with aluminum foil. Bake in 325 oven about 1 hour and 15 minutes. Cool 20 minutes. Remove foil, turn onto wire rack.
