2 tbsp. olive oil
1 small onion, chopped
2 cloves garlic, minced
2 large tomatoes, seeded and chopped
2 cans 11 oz. each of corn, drained
1 6 oz. pkg.
1 pkg. Oscar Mayer smoked ham, chopped
1 bay leaf
salt
6 Poblano chiles roasted, peeled, and seeded
1 pkg (8oz.) Kraft shredded cheddar and Monterey
Jack cheese

Heat oil in medium sauce pan on medium heat. Add onion and garlic and cook 2 minutes; stirring frequently, add corn and tomatoes, ham and bay leaf. Cook 10 minutes stirring occasionally. Remove bay leaf and discard. Season with salt to taste. Fill each pepper with 1/4 cup of tomato mixture and 1/4 cup of the cheese. Place filled side up, in single layer in greased baking dish. Bake at 350º for 15 minutes or until cheese is melted. Garnish with sour cream just before serving. Serves: 6 Prep 15 min.
