3 slices bacon, diced
1 small onion, chopped
1 cup uncooked rice
1 can okra
1 can tomatoes
1 cup diced cooked ham
1 cup tomato juice
salt and pepper to taste

Directions:
Directions:
Preheat oven to 350 º. Fry bacon over medium-high heat 5 minutes. Remove bacon to paper towel. Add onion and rice to bacon drippings in skillet. Cook 5 to 10 minutes until rice is transparent, but not browned. Spoon onion, rice, and drippings to 3 quart casserole. Add okra, tomatoes, ham, tomato juice, cooked bacon, salt and pepper. Cover and bake 30 minutes until liquid is absorbed. Remove from oven and fluff with fork.
This is also good using sausage instead of the ham.
