Buttermilk Pralines Recipe

2 c granulated sugar
1 tsp baking soda
1 c water
2 c pecans
1/4 c dry buttermilk powder
1/8 t salt
2 tbsp butter
1 t vanilla
whole pecans for garnish (optional)

Directions:
Directions:
Combine sugar, soda, buttermilk powder and salt in a 4 qt saucepan; add water and butter. Cook over medium heat to 215º on a candy thermometer, stirring gently. Add 2 c pecans and continue to cook, stirring constantly to 230º. Remove from heat; cool 10 minutes in saucepan. Add vanilla; beat until mixture begins to thicken. Quickly drop by teaspoonfuls onto buttered foil. Garnish with whole pecans if desired. These are slightly sugary. Typical of traditional pralines.
