Butter/oil to grease pan
3-4 oz. cans mild green chiles
1 dozen eggs
diced onion (optional)
1 lb. Monterey Jack cheese
16 oz. sour cream

Directions:
Directions:
Preheat oven to 350º. Grease 9x12 baking dish, drain, wash seeds from chilies. Line dish with chilies. Slice cheese & top chilies evenly. Beat eggs, and sour cream until blended. Pour over cheese & chilies. Bake ubncovered 30-40 minutes. Eggs are done when knife comes out clean.
