1 c. cornmeal
1 c. unbleached white flour
1/3 c. sugar
2 ½ tsp. Baking powder
¼ tsp. Salt
1 pint fresh strawberries, cut into small pieces
1 c. plain yogurt
¼ c. canola oil
1 egg, slightly beaten

Directions:
Preheat oven to 350º. Grease muffin pan or use liners.
In a large bowl, whisk the dry ingredients together. Add the strawberries, tossing gently to coat with the flour mixture.
Whisk together yogurt and oil. Add eggs.
Add the yogurt mixture to the dry ingredients. Mix with a wooden spoon until just barely wet. Do not overmix.
Fill muffin pan to the brim. Bake for 20-30 min. or til toothpick comes out clean.
