Chicken Marinade:

½ c. peanut oil
½ c. soy sauce
¼ c. lemon juice
boneless, skinless chicken breasts


Smoky Red Onion and Avocado Salsa:


1 small red, cut into 4 slices
1 tomato, cut into 4 slices
6 Tbsp. fresh lime juice
¼ c. chopped cilantro
4 -10 dashes of Tabasco
1 medium avocado, chopped
salt and pepper to taste

Directions:
Directions:
1. For salsa, grill onion and tomato slices 2 minutes per side. Chop coarsely and transfer to a bowl.
2. Stir in remaining ingredients.
3. For chicken, combine marinade ingredients and pour over chicken (arranged in a non-metal dish.) Marinate up to 3 hours.
4. Grill chicken over medium-low coals until no longer pink.
5. Serve chicken and spoon salsa on top.
