1 onion
1 stalk celery
1/2 oz butter
1T. oil
8oz. ham bones or ham hocks
8oz. lentils
1-14-1/2oz. can tomatoes
4c .water
2 beef stock cubes
2T. chopped parsley
grated Pecorino Romano cheese

Peel and chop onion, chop celery; heat butter and oil in pan, add onion and celery; cook, stirring, until onion is transparent. Add ham bones, lentils, undrained tomatoes (cut tomatoes in small pieces), water and crumbled stock cubes. Cover, bring to a boil, reduce heat, simmer covered for approximately 1 hour or until lentils are as tender as desired. Remove and discard ham bones, season with pepper, add parsley.
Add 1/2 c. small shells or other pasta to lentil soup, cook as directed, sprinkle grated Pecorino Romano cheese on top, and enjoy!
