Vegetable Soup Recipe

1 1/2 lb. stew meat cubes
2T. vegetable oil
1 clove garlic
2 cans beef broth
1 can green beans
1 can corn
1 can peas
2 cans stewed tomatoes
1 onion - largely chopped
5 carrots - peeled and cut up
5 celery stalks - cut up
5 potatoes - peeled and cut up
Italian seasoning, salt/pepper, thyme, parsley to taste

Brown meat in oil with garlic. Add beef broth and simmer to soften meat. Add veggies using all of the liquids from the cans and enough water to cover. Add spices to taste. Simmer until veggies are cooked.
This is an easy recipe to make with kids. It doesn't matter how they cut the veggies, they love to pour and stir and they are so pleased to share their soup once it's done! Great for a snow day!
