Ingredients: 1 Large Jar/Can Green Chilies 1 Pound Monteray Jack Cheese Shreded 1 Dozen Large Eggs 2 Cups Sour Cream 1 LG Or 2 Med Tomatoes 1 Teaspoon Salt Pref "Kosher" Or Regular 1/2 Teaspoon Fresh Grond Black Pepper 1/2 Cup Heavy Cream Or Whole Milk 1/2 Teaspoon White Pepper 1-2 Table Spoons Butter Garnish - Salsa -Sour Cream -Opt Guacomole

Directions:In Large Cassarolle Rub Butter Generously All Over Then Line Bottom with Drained Green Chillies Can Use Roasted Red Peppers Instead Or Both , Add All Eggs To Lg Mixing Bowl Add Salt,Black Pepper Whisk A Little then Add Sourcream Wisk A little More Add Milk or Cream Wile Slowly Whisking There should be small lumps of Sour Cream Then Let Egg Mixture Rest About 5 Min While Covering The Chilies With Cheese Spread Evenly Across Bottom Finaly One Last Whisk to Egg Mixture and pour Slowly over top Of Cheese Then Just A Quick Dusting Of White Pepper over Top and Put in a Pre Heated 350 degree oven for 30-45 min till top is golden and slightly Brown Remove From Oven And Top With The Tomato Slices |
