Chicken or Turkey Pasta Salad Recipe

8 oz. Linguine noodles
2 c. petite peas, don’t cook
½ c. slivered or sliced almonds, toasted
2 c. turkey or chicken
½ c. chopped green onions
¼ c. chopped red pepper or 3 T. pimento

¾ c. oil (1/2 salad oil and ½ olive oil)
3 T. Dijon mustard
1 tsp. Salt
1/3 c. tarragon vinegar
2 tsp. Grated ginger
¼ tsp. Fresh ground pepper

Cook pasta and rinse with cold water. Add rest of ingredients.
Mix dressing ingredients in food processor. Mix 1/4 c. dressing in pasta and toss gently. Add remaining ingredients and refrigerate until 1/2 hour before serving. Add remaining dressing and serve.
(5 times the recipe plus a little extra turkey makes 55 cups. I only use 4 c. peas.)
