"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

c butter melted
1 c sugar
2 eggs
1 tsp or more vanilla
3 - 4 large mashed bananas
2 - 3 Tbsp orange juice
2 c flour
tsp soda
tsp salt
2 shakes cinnamon

Topping (optional):
1 Tbsp cinnamon
1 Tbsp sugar
1 Tbsp melted butter

Mix wet and dry ingredients. Pour into a greased and floured bread pan. Once it has cooked for about 25 minutes, spoon topping over the top, and return to the oven. Bake at 350 for about an hour. It doesn't get really dark like some banana breads do. You can do a knife in the middle test to check if it is done.
