Ingredients:  
1 french baguette sliced in small slices or little toasts.(Often the bakery will have pre-sliced bags of their baguettes.)
4-5 roma tomatoes or a handful of cherry tomatoes. You can use what is in season and mix the tomatoes you use all together for a better flavor.
¼ of an english cucumber, diced up
Minced garlic, to taste
3-4 leaves chopped basil (fresh is best, but you can use dried or dehydrated if you need to.)
2 Tbsp diced red onion if desired
½ c shredded parmesean cheese or a
good mozarella
2 Tbsp balsamic vinegar
Salt & pepper
Shake of garlic salt
Shake of Mrs. Dash
Drizzle of olive oil

Directions:
I toast the little slices of bread in the oven. Before removing, I top with a little cheese on each and return it to the oven until it melts. I mix up tomatoes, diced cucumbers, garlic, onion, basil and then add balsamic vinegar enough to coat tomatoes and have a little sauce in the dish. I drizzle just bit of olive oil too. Add seasonings to desired taste. Then scoop the mixture on top of toast and serve on a platter.

These are tasty and if I have bread that gets a little dried out I will make these. They are also pretty.
