2 lbs potatoes
2 eggs
1 cup (4oz) shredded sharp cheddar cheese
2 tbsp all purpose flour
1 tsp salt
vegetable oil

Directions:
Directions:
Cook potatoes in boiling salted water for 20 mins. or until tender. Cool slightly , peel and mash. Add eggs, cheese, flour and salt. Mix well.
With floured hands, shape potatoes mixture into 1 1/2" balls. Deep fry in hot oil (375º)until potatoes are golden brown. Drain well on paper towels.
