4 large onions
4T. (1/2 stick) butter
2T. flour
3 -13 3/4oz. cans beef broth
1/2 tsp. salt
1/4 tsp. pepper
1/2c. dry white wine
8 -1/2" thick slices French bread, toasted
8 slices Swiss or Gruyere cheese

Directions:
Directions:
Saute onions in butter in a heavy 4qt. saucepan over medium heat, until golden brown, about 20 minutes.
Stir in flour, cook 1 minute. Add broth, wine, salt, and pepper. Heat to boiling, then reduce heat and simmer, partially covered for 30 minutes.
Heat broiler. Spoon soup into crocks and place on baking sheet. Add 2 slices of bread and cover with 2 slices of cheese. Broil until cheese is bubbly brown and forms a crust.
