olive oil
1 medium onion, chopped
salt
cayenne pepper
1 lb. ground beef
1 1/2 tsp. chili powder
1 tsp. ground cumin
Creole seasoning
1 tsp. dried oregano
1T. chopped garlic
1 can tomatoes
2T. tomato paste
1 can beef broth
1 can dark red kidney beans

Directions:
Directions:
In large saucepan, heat the oil. Add onions and saute 3-5 minutes. Season with salt and cayenne pepper. Stir in meat, chili powder, cumin, Creole seasoning and oregano. Brown the meat for 5-6 minutes.
Stir in the garlic, tomatoes, tomato paste, beef broth and beans. Bring the mixture to a boil and reduce to a simmer. Simmer uncovered for 1 hour, stirring occasionally or until beef is tender.
Serve with tortilla chips, grated Monterey Jack cheese, sour cream and/or jalapenos, if desired.
