1 chicken breast
2 chicken wings
chicken soup parts i.e. neck, gizzard, liver, chicken backs etc.
parsley
2 stalks celery
1 fresh tomato chopped
1 large onion
1 medium whole, peeled potato
8oz. bag baby carrots
salt and pepper to taste
3 packs Herbox sodium-free chicken bouillon
9oz. soup macaroni (tubettini, alphabets or orzo--cooked as per directions on box)
grated Pecorino Romano cheese

Fill a large pot 3/4-full of cold water, add all the chicken pieces and cover. Bring to a boil. Strain and remove the fat from top and sides. Add a handful of fresh parsley, 2 stalks of celery (each cut into 3 pieces), tomato, onion, whole potato, baby carrots and the 3 packs of sodium-free Herbox chicken bouillon. Add salt and pepper to taste. Cook over low heat for approximately 1 1/2 hours.
Strain soup in large pot. Add chicken breasts, cut in small pieces, chicken wings, baby carrots cut in half, potato cut in quarters. Bring soup to a boil and add the soup macaroni. When serving, sprinkle grated Pecorino Romano cheese on top. Enjoy!
***Here's a little Chicken Soup story I would like to share with you....All our grandchildren love chicken soup, so when grandma visited them, she would fill a "Polly O" Ricotta cheese container (which was cleaned and used for storage) and bring the chicken soup. One day, while shopping with Matthew (who was 3 at the time), he spotted a "Polly O" container in the cheese section at Shop Rite, and shouted with extreme joy, "Look grandma, they're selling your chicken soup in the store."
