4 eggs, room temperature
1/4 teaspoon salt
1 cup granulated sugar
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon vanilla
1/4 cup hot milk
tart jelly, your choice of flavor
sifted confectioner's sugar for dusting

Directions:

Beat the eggs and salt together until light.
Add the sugar; beat again.
Sift the flour and baking powder together and slowly add to the egg mixture, blending thoroughly, but do not over mix.
Add the vanilla and hot milk last.
Line the bottom of a greased 10x15x1/2in. pan with wax or parchment paper.
Pour in the batter; bake at 400 for 15 minutes.
When the cake is done, remove it from the pan immediately onto a towel Remove the paper. Sprinkle the cake with sifted confectioner's sugar. Cut off any hard edges.
Spread the jelly on top of the cake quickly. Roll the cake. Work quickly or the roll will crack.
Refrigerate until chilled.
