4 green onions finely chopped
2 cloves garlic, minced
2T. olive oil
6oz. baby spinach
1/4c. snipped fresh basil
1/2 tsp. salt
1/4 tsp. ground pepper
1-13.8 oz. pkg. refrigerated pizza dough
1/4c. crumbled feta cheese
2T. toasted pine nuts
1T. butter melted
1/4c. finely shredded Parmesan cheese

Preheat oven to 375ºF. Grease 12 muffin cups.
In a skillet cook green onions and garlic in 1T. of the oil until tender. Add spinach and basil, cook and stir over medium heat just until wilted. Drain off excess liquid. Stir in salt and pepper. Set aside to cool.
Unroll dough on floured surface and shape into 12"x8" rectangle. Brush dough with remaining oil. Spread spinach mixture to within 1 inch of the edges of dough. Sprinkle with feta cheese and pine nuts. Roll dough into a spiral. Slice roll in 12 pieces and place cut side up in muffin cups. Brush with butter and sprinkle with cheese. Bake for 18-20 minutes or until golden brown. Let cool 2 minutes and serve warm.
