7 large eggs, room temperature
2 cups milk, room temperature
6 Tbsp. butter, melted
2 cups flour
3/4 tsp. salt

Directions:

Preheat oven to 375º.

Break eggs into mixer bowl; beat until frothy. Beat in milk and butter. Slowly beat in flour and salt.

Generously oil custard cups ( 4 or 6 oz. size) or popover pan and fill within 1/2 inch of top. Bake about 45 minutes, checking popovers at 35 minutes. Makes 12 popovers.

*Note: Batter may be made ahead and stored in covered pitcher in refrigerator.

For cheese popovers, beat in 1/2 cup grated parmesan cheese with the flour mixture. Bake as directed.

Another great recipe from Mary Grace. I know that popovers are a personal favorite of hers. We were lucky enough to be there when her daughters made these for their Mom as part of a delicious dinner for her 65th birthday.
