1 T. oil;
1 med onion, chopped;
1 red or yellow bell pepper, chopped;
2 cloves garlic;
1 can black beans, drained;
1/2 c. rice;
1 1/2 c. chicken broth;
1/4 tsp. red pepper flakes;
1/4 tsp. thyme;
bay leaf;
1/2 c. grated cheese;
flour tortillas

Directions:
Directions:
In a large fry pan, cook onions in the oil until
transparent. Add pepper and garlic, and cook slightly
more. Add beans, rice, broth, and spices. Cook covered
for about 15 minutes, or until rice is done. Remove bay
leaf. Spoon mixture onto individual tortillas, and
sprinkle with cheese. Fold over. Enjoy!
