2 ten ounce bags fresh spinach
2 tablespoons butter
2 shallots, minced
2 cloves garlic, minced
1 tablespoon plain flour
1/4 teaspoon ground nutmeg
pinch of cayenne pepper
3/4 cup milk, half & half, or cream
salt and pepper, to taste

Directions:
Directions:
Bring large pot of salted water to boil. Add spinach and cook for 2 minutes. Drain in colander and press out as much water as possible.

Heat butter in medium pan over medium heat. Saute shallots til soft, about 4 minutes. Add garlic and cook for another minute. Add flour and cook for 3 minutes. Slowly whisk in milk or cream, add spinach, nutmeg, salt and pepper. Cook until cream is reduced by half.
