Kosher salt for cooking pasta, plus 1 teaspoon
3/4 pound orzo pasta
1 basket (about 2 cups) Toybox tomatoes or a combination of flavorful cherry or grape tomatoes
2 tablespoons chopped fresh mint
1/4 cup bold-tasting extra-virgin olive oil
1/2 teaspoon granulated garlic powder (optional)

Directions:
Bring a 4-quart pot of water to a boil. Add enough salt tto the boiling water to make it taste like the ocean. Cook the past according to package directions, stirring occasionally, until al dente.

While the orzo is cooking, cut the tomatoes in half throught the stem and place in a bowl. Add the mint, olive oil, garlic powder, and 1 teaspoon salt and toss to mix.

When the orzo is done, drain well and toss immediately with the tomato mixture. Taste and adjust the seasoning with more olive oil, garlic powder, and/or kosher salt, if necessary. Serve hot, or cover loosely and set aside, stirring occasionally. If preparing this dish more than 30 minutes ahead, be sure to taste and adjust the seasoning again just before serving.

FYI - toybox tomatoes are the little multi-colored (red, orange, yellow) tomatoes that are mini and pear shaped.

A fantastic summer pasta salad - I can personally eat a third of this recipe in one sitting as a meal in itself.
