6 - 7 c chicken broth
½ c raw rice or barley
3 carrots
2 small potatoes
6 Tbsp butter and flour
1 pint half-n-half
4 c cook meat (turkey or chicken)
½ c chopped green onions
Salt and pepper
¼ c fresh minced parsley

Directions:
Directions:
Heat broth to boiling. Add rice and simmer 10 minutes. Add carrots and potatoes. Simmer, covered, until all veggies are tender, about 10 minutes. In another pan melt butter, blend in flour and cook, stirring, until bubbling. Remove from heat and blend in half-n-half then 1 cup broth. Heat and stir until boiling. Stir butter mixture into broth. Add meat and green onions and season to taste. Heat well and garnish with parsley if desired.
