2 c. sugar
2 c. flour
2 t. soda
2 t. cinnamon
1 t. salt
1 1/3 c. oil
3 eggs
3 c. grated carrots

Cream Cheese Frosting:
1 box powdered sugar
1 stick oleo
8 oz. pkg. cream cheese
2 t. vanilla
1 c. nuts, chopped

Directions:
Directions:
Sift all dry ingredients into large bowl. Add oil and blend by hand. Add the eggs and beat. Add the carrots. Bake at 350 degrees in a 9 x 13" pan or 3 layer pans for 30 to 35 minutes in a 300 degree oven. Frost with the cream cheese frosting.
FROSTING:
Beat all ingredients together and frost cake; putting between layers if cake is baked in layer pans.
