1 medium cabbage, shredded
1 green pepper, diced
2 medium sweet onions, cut into rings or chopped
1 c. sugar
1 c. vinegar
1 tsp celery seed
1 tsp dry mustard
1 tsp salt
pepper to taste
1 c salad oil

1. Combine cabbage, peppers, and onions, and place into a large bowl.
2. Pour sugar over top.
3. Bring vinegar, celery seed, dry mustard, salt, and pepper to a boil. Remove from heat and whisk in oil. Pour over cabbage mixture.
4. Let set overnight in the refrigerator, stirring after several hours. Will keep for two weeks in the fridge.

NOTE: Splenda can be used in place of SOME, not all, of the sugar. White wine vinegar is good, but plain white vinegar is ok as well.

I do not usually like cole slaw, but this is a great alternative to creamy cole slaw!!
