Garden ripe tomatoes
Bread (white or wheat)
Mayonnaise
Salt
Pepper
Accent
Fresh grated onion

Directions:
Tomatoes (if not garden ripened, at least vine ripened) should be about the same size as the bread rounds. Skin tomatoes by dropping them in boiling water for a short time. Then pulling the skin off. Slice tomatoes about 1/4 inch thick. Salt and place on paper towel to drain.

Mix mayonnaise, salt, pepper, accent, and grated onion to your liking. Set aside.

Cut bread with 2 inch round cookie cutter. Spread mayonnaise mixture on two slices of bread. Place tomato slice on one bread round and place a second bread round on top.
