1/3 c. shortening
1/2 c sugar
2 eggs
1 1/3 c flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 c banana, mashed

Directions:
Directions:
1. Cream shortening and sugar. Add eggs and beat well.
2. In small bowl, sift together dry ingredients.
3. Add flour mix to sugar mix, alternating with banana, mixing well after each addition.
4. Pour into greased loaf pan.
5. Bake 350º for 40 - 45 minutes, or unti toothpick comes out clean. Check after 30 minutes, if browning on top, cover with foil.
6. Remove from pan to cool.
