Crust:
1 stick margarine melted
1 c flour
3 T confectioner's sugar

Filling:
1 1/4 c sugar
1 1/4 c water
4 T corn starch
1 small box strawberry jello
1 quart fresh strawberries, hulled and if they really big you might want to cut them into halves or quarters.

Mix crust ingredients together, press into 9" pie pan (no rolling, yay!) Bake at 350 for 15 minutes, cool.

For filling, in saucepan mix all ingredients except the jello. Cook over medium heat until clear. Add the jello, stir in. Cool. Then add the strawberries and put into the shell. Chill. Serve with whipped cream.

Shoney's was (I think they are gone now) a restaurant back east years ago. They were Big Boy's here, and were famous for this fabulous strawberry pie that they only had when strawberries were in season. (you young ones will be surprised to hear that some produce like strawberries used to actually only be available certain times of the year!) :^) It is the perfect summer dessert! We have done the same pie with peaches and peach jello, also good.
