1 1/2 cups rice
6-8 cups water
1 quart milk
1 cup sugar
5 eggs
1 tsp vanilla
pinch of salt
sugar for meringue (1/4 cup)
cinnamon

Directions:
Directions:
Separate yolks from egg whites. Save egg whites for meringue. Beat eggs yolks and sugar. Let sit. Cook rice and water w/salt until dry, about 25 minutes. Then mix milk and the egg yolk mixture and vanilla into the cooked rice. Cook this mixture to thicken. Then mix egg whites and make meringue. Put rice pudding into baking dish. Put meringue on rice pudding. Sprinkle with cinnamon. Put into pre heated oven at 350 degrees. Just brown meringue. Take out of oven and put into a big bowl. Mix well. Let cool and put in refrigerator.
