1/3 cup Olive Oil, Extra Virgin
½ cup Flour, All Purpose
3 cans Chicken broth, 14 oz.
1 cup Onion, diced
1 cup celery, diced
1 cup Green Bell Peppers
½ can Tomatoes, diced and drained
2 can Crabmeat, canned, 6 oz.
½ pound Sausage, Smoked, slice ¼ slices
1 tsp Black pepper, cracked
2 tsp Salt
1 TBSP Garlic, granulated
1 TBSP Thyme
1 pound Shrimp, med.
1 pint Oysters, drained & chopped, optional
16 oz Okra, frozen

Directions:
Make a Rue. Light chocolate or coffee w/cream color. Dice onion, celery, bell pepper. When the rue is ready add the onion, bell pepper and celery and simmer until onion is opaque. If mixture is to dry add a little stock. Add rest of the ingredients except shrimp and okra. Cook on low heat 30 minutes, add the shrimp and okra and cook another 15 minutes or until mixture boils. Serve over white rice and top with sliced green onions, use all of the onion, green and white, optional. ================================================RUE: Cook on low heat stirring with whisk frequently. DO NOT BURN! When rue is color of milk chocolate or coffee with cream it is ready. 20 - 30 minutes. If you get dark flakes in the rus , you burned it, Start over.
