1 pound ground beef
1/2 medium yellow onion
4 medium cans of beans, Red, Pinto, Great Northern,
Black - or a mixture
2 12 oz. cans V8 juice
2-5 tsp. ground Ancho Chili Pepper
2-3 tsp. ground cumin
1/2 tsp. ground ginger
1/3 tsp. salt
1/2 tsp. ground pepper

Directions:
Directions:
Brown ground beef with onion, chili pepper, ginger,
cumin, salt and ground pepper. Add beans without
draining. Add V8 juice. Stir, cover, and reduce heat to simmer until thoroughly heated. Sliced and chopped jalapeno, serrano, or Anaheim peppers may be added with onions as taste permits. Brown rice with equal volumes each of water and additional V8 may be added before beans to stretch. Serve with Frito's and shredded cheese as garnish.
