1 c. butter (softened)
1 c. sugar
2 egg yolks
2 c. flour
1 c. chopped pecans or walnuts (I use pecans)
1/2 c. strawberry jam (you can also use raspberry)

Directions:
Cream butter, add sugar and cream until light and fluffy. Add egg yolks and blend well. Gradually add in flour and mix without using electric mixer. Fold in nuts. Pat out 1/2 of the batter in a well greased 8X8 pan. Spread jam evenly on top of batter, out to about 1 or 1/2 inch to the edge. Cover with remaining batter and bake in a 325º oven for 1 hour. Cool and cut into squares.

Hints: a) make sure side of the pan are well greased or else the jam will REALLY stick. b) to shape the top part of the dough, put a piece of plastic wrap on a cutting board. Pat out the dough to the approximate size of the pan and using the cutting board as a support, lay the dough on top of the jam layer. c) sometimes I dust cooled cookies with powdered sugar.
