potatoes (4 - 6 lrg taters, diced)
1 onion (chopped)
2 qts water
2 cans cream of chicken soup
1/2 lb Velveeta
salt & pepper

Directions:
Boil taters & onion in salted water until tender. Add soup and cheese. Cook for about 30-45 min (at least). Wonderful w/ Mexican Cornbread
