2 bags frozen hash brown potato cubes
2 lbs grated cheddar cheese
16 oz. sour cream
1 can cream mushroom soup
1 can cream celery soup
1 yellow onion, chopped
Green onions
Salt, pepper, garlic to taste
Bacon bits (optional)
1 1/2 c. butter
Garlic cheese croutons or potato chips or corn flakes

Mix potatoes, 1/3 of cheese, sour cream, soups, onions, salt, pepper and garlic (and bacon bits if desired) together.
Saute onions in small amount of butter and add to potatoes.
Melt rest of butter in bottom of 9x13 pan. Fill with 1/2 of potato mixture.
Sprinkle with 1/3 of cheese.
Fill with rest of the potatoes.
Top with lots of cheese.
Bake at 350 for 1 - 1 1/2 hours.
