1 head cauliflower cut into pieces - blanche
2 cup Swiss cheese, shredded
2 egg yolks beaten
1 tsp nutmeg
1/2 tsp salt
1/8 tsp cayenne pepper
1/2 cup crushed garlic croutons
1/4 cup melted butter

Directions:
Directions:
Mix all but last two ingredients together in baking dish. Sprinkle with croutons and drizzle with melted butter. Bake at 350º 15-20 minutes.

This recipe was suggested to me as a substitute for potatoes when I was on South Beach Diet --- is a little rich -- wasn't sure this was better than potatoes or not.
