Ingredients:  
Uncle Ben's long grain & wild rice small box, cooked according to directions --
squeeze juice of 1/2 lemon over one chicken breast, cooked and cooled and in chunks
3 green onions, sliced
1/2 red pepper, diced
2 oz pea pods, cut into 1 inch pieces
2 ripe avocados, chunks
1 cup pecan halves, toasted - can just do this in oven



Dressing:

2 large cloves garlic
1 T Dijon mustard
1/2 tsp salt
1/3 tsp sugar
1/4 tsp pepper
1/4 cup rice wine vinegar
1/3 cup vegetable oil

Toss rice with dressing and refrigerate 2-4 hours...toss rest of ingredients in before serving.
