2 eggs
1 1/2 cups sugar
2 cups shortening
2 tsp vanilla extract
4 cups all-purpose flour
2 tsp baking powder
1 1/2 teaspoon salt
2 cups cooked, mashed carrots

ORANGE ICING:
2 T. Orange Juice
1/4 cup butter
2 cups powdered sugar
grated rind of 1 orange
Directions:
Directions:
Beat shortening; gradually add sugar, beating until light and fluffy. Add eggs, vanilla, beating well after each addition. Add dry ingredients; stir in carrots and mix well. Drop by tablespoonfuls onto greased baking sheets. Bake at 375° for about 15 minutes. Transfer cookies to racks. Ice cookies while still warm.
Icing: Combine juice and orange rind with butter; stir in sifted confectioners' sugar until desired spreading consistency is reached. Add more juice or confectioners' sugar as needed.
