2 slices bread
1 lb. ground beef
1 egg
1/4 cup parmesan cheese, grated
1 tspn parsley
1 clove garlic minced
1 tspn salt
1/2 tspn pepper or to taste
cheese, cut in small cubes
2 tbs cooking oil

Directions:
Directions:
Soak bread in 1/2 cup cold water for 5 minutes. Squeeze dry. Combine all ingredients except oil and cubed cheese in bowl. Mix thoroughly with hands, shape into balls about 1 1/2 inches in diameter. Place a cube of cheese in center of each meatball. Reshape into balls. Heat oil in skillet. Brown meatballs quickly on all sides (about 5 minutes) DO NOT cook all the way through. Simmer in sauce for two (2) hours. Meatballs and sauce may be frozen.
