3 lb. (12 medium) potatoes, peeled, cooked & hot
1 (8 oz.) pkg. cream cheese, at room temp.
¼ c. butter or margarine
½ c. sour cream
½ c. milk
2 eggs, lightly beaten
¼ c. finely chopped onions (optional)
1 tsp. salt
dash pepper (optional)

Directions:
Directions:
In large mixer bowl, mash hot potatoes (or mash by hand). When all lumps are removed add cream cheese in small pieces & then the butter. Beat well until cheese & butter are both melted & completely mixed. Mix in sour cream. To the milk add the eggs & onion. Add to the potato mixture along with the salt & pepper. Beat well until light & fluffy. Place in a greased 9 inch round casserole & refrigerate several hours or overnight. Bake in preheated 350º oven for 45 minutes until lightly browned on top.
