2 cups hot mashed potatoes (mashed with milk and butter)
2 1/2 cups sugar
2 cups buttermilk
2 eggs, slightly beaten
2 Tblsp butter, melted
2 tsp baking soda
2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
6 to 7 cups flour

Directions:
Directions:
In a large bowl, combine potatoes, sugar, eggs and buttermilk. Stir in butter, salt, baking powder, baking soda, cinnamon and nutmeg, and enough flour to form a soft dough.
Turn onto a lightly floured surface, pat out to 3/4 inch thickness, and cut out with a floured doughnut cutter. Heat one inch of oil to 375º and fry the doughnuts until browned. Place on paper towels to soak up any oil. Coat with sugar or frosting.
