1 Whole Chicken (3-4 pounds)
3-4 potatoes peeled and sliced
1 medium onion sliced
4 carrots peeled and sliced
1 pressed garlic clove
1 tbsp. olive oil
1/2 tsp. dried thyme leaves
1/2 tsp dried rosemary or 2 sprigs of fresh rosemary
salt and pepper to taste
1/2 cup water

Directions:
Preheat oven to 400º. Rinse chicken and place in deep dish (stoneware if you have it) breast side up. Place vegetable around chicken. Mix garlic, oil, thyme, rosemary, salt and pepper together and brush over chicken with pastry brush. Pour water over vegetables. Cover and bake 1-1 1/4 hours. Remove lid and bake another 20 minutes to allow chicken to brown.

I can never figure out which side is breast up so it has been renamed by Steve as Upside Down Chicken. It bakes well either way - I have done both. Enjoy!!
