2 c Flour
2 tsp Soda
2 tsp Baking Powder
1 tsp Salt
2 tsp Cinnamon
1 3/4 c Sugar
3 c Grated Carrots (by hand)
1 1/4 c Oil
4 Eggs
1 c Raisins (optional)
1/2 c Nuts (optional)

Directions:
Directions:
Sift all dry ingredients. Add oil, sugar and eggs. Beat well. Fold in carrots, nuts & raisins. Poor into a 9x13 or two 9" pans (round). Bake at 350 for 35-45 minutes. Check with toothpick to make sure cake is done. Cool 10 minutes, then remove from pan and let cool completely before icing.
