Cornbread:
2 cups self-rising meal
2 eggs
½ cup margarine
½ cup milk.

Salad:
1 skillet cornbread
6 slices crisply fried bacon
½ cup sweet pickle relish
½ cup mayonnaise
2 tomatoes diced
1 onion diced
1 small green pepper diced

Directions:
Directions:
Bake cornbread. Crumble cornbread in a large bowl. Crumble crisply fried bacon on top of cornbread. Add tomatoes, onions, sweet pickle relish, peppers and mayonnaise. Toss all ingredients together until moistened. Chill for at least 3 hours. We like this with other vegetables like peas, okra, etc.
