*You'll need a BISCUIT DOUGH made adding 1 TBSP. of sugar to it. Make enough to line a 12x12x2 baking dish,1/4" thick,PLUS enough dough to make 8 {1/2" wide} strips for a lattice style top crust.**For some extra flavor,mix some dried basil into the dough** Press the ready dough into the sprayed & floured pan
{Prepare all this first.}

FILLING:
* 1 1/2 pounds ground Italian sausage
* 7 eggs/1 white reserved
* 1 cup grated Romano cheese
* 1 cup ricotta cheese
* 1/2 cup minced onion
* 3 TBSP. minced garlic

*Begin cooking the sausage in a large heavy skillet,'til it's done.*Drain any excess grease.*Add the onion & garlic,mix well & remove from the heat & let it cool.*Heat the oven to 350.*In a large mixing bowl,beat the eggs.*Add the sausage mixture & the remaining ingredients & mix well.*Pour the sausage mixture into the crust,then top with the strips,twisting them to form a lattice look.*Beat the reserved egg white & 1 TBSP. water together & brush onto the biscuit topping.*Bake for about an hour 'til the insides are bubbly & the topping is golden brown.*Let it cool about 10 minutes before serving.
