1 lb. sausage mild or hot (Jimmy Dean works well)
1 large sweet onion
2 cans Rotella diced tomatoes/green chives
1 can evaporated milk
1 tbsp. corn starch (if needed)
¼ c. water (if needed)
2 c. colby-jack shredded cheese

Directions:
Directions:
Cook and drain sausage & onion. Add 2 cans of Rotella diced tomatoes/green chives & mix together. Heat (separately) evaporated milk until thick. Watch it! It will burn quickly, just continue to stir it for about 10-15 minutes. (If needed to thicken quicker, you can add 1 tbsp. of cornstarch and a small amount of water). Add colby-jack shredded cheese, the sausage/onion mixture and thickened milk together, mix and heat together for approx 20-30 min. Save some cheese for the top when ready to serve. Guaranteed to be the best dip you will ever have! For a double batch, double the recipe.
