4oz butter,
6 oz s/r flour 5 oz sugar,
1oz cornflour,
1 egg,
1/2 cup milk,
grated lemon rind,
3 medium apples sliced,
mixed spice or cinnamon

Directions:
Directions:
Cook apple gently don't over cook, cool apples, but not cold. Beat butter and sugar, add egg and shifted flour and alternate with milk and shifted flour. Prepare tin, lined and greased. Put 1/2 cake mixture in the bottom and add the cool apple. Sprinkle mixed spice or cinnamon of the apple and top with remaining mixture, sprinke mixed spice or cinnamon. Cook in moderat oven for 40 minutes, turn oven off and leave cake in the oven to cool.

I like to save some cooked apple and place on top of the cake before cooking and sprinkle almond flakes then cinnamon.
